Having Canonical manage the domain sounds good to me. If nothing else
because that lessens the risk of the domain accidentally expiring.
When it comes to web hosting I don't have much of an opinion either way.
Yet, let us wait a few more days before sending any request, and give
others a bit more time to potentially object. After all, not everyone
have the good sense to read their e-mail all the time.
