Banana POS and gShop look good. I'll probably be using banana since it
fits my needs better. Another open-source option is a FreeDOS install
since *lots* of POS systems are in DOS. I think freedos is free as in
freedom? But yeah, I had no idea GNU/Linux had so many POS options.
