While saying that Office 2007 is a must-learn for students is absolutely
crazy... I can understand their reasoning in wanting to at least provide
instruction for it when most colleges and universities use Office formats
and software.
I think showing students how to use any and all software applications in a
category such as productivity suites would be best. That way, students can
figure out and learn for themselves what they like the most. I have a
feeling most will choose the free (coincidentally also "FREE" as in FOSS)
solution. : )
