So far I have not had any issues with 64bit. Hulu works fine. Flash has come
a long way in the last year or too. I don't play with wine, so I can't
comment there.

There are a lot of players, and it really comes to preference in UI
design/features.  I use exaile! As my primary mp3 player. Banshee seems to
be getting good press on blogs. Rythmbox ofcourse, probably the most used as
its stock. Cmus if your into ncurses cli apps.. I'm sure there 10 more good
ones that I'm unaware of as well.
