Setting up RAID using Dapper Drake

My first post here. Excuse me if you've done this one to death already.

My desktop configuration has 2*40gb WD ATA drives (identical model). I
was able to setup a RAID1 mirror if I did a server install. But what I
want is the full graphical desktop + drives in RAID1 as I prototype a
new layout for the next round of in-store POS systems for a customer
of mine. Later on the drives will be 120gb serial ATA, but I want to
get my practice in (mistakes out of the way) on a junk machine on my
workbench before I have to deal with the customer.

I can't get the graphical "desktop" install to cooperate setting up
RAID of any type. Anyone else had this problem? Shouldn't there be an
easy way to setup RAID? Or am I missing something? Would this be a
non-problem if I move forward to Edgy?

Alternatively, I suppose I could add all the desktop stuff on top of a
server install, but I'd rather not do that if it's just a case of me
failing to grasp something from the disk partitioning step of the
graphical install process.

Other than this confusing issue, everything on the desktop machine I'm
playing with works perfectly straight out of the box using the 6.06LTS
install DVD from the "Official Ubuntu" book (a bit lightweight for my
tastes, but just right for my Windows-centric *nix-suspicious wife).
My dbms app moved over, compiled and ran first time. I have a few
quirky things with my laptop install, but I'll save those for another
thread.
