You would do just fine to restore the changes you made to
/etc/X11/default-display-manager and use gdm to start KDE... Just select
Options from the gdm login screen, and the Select Session. You should see
KDE listed.
You could also switch to the kdm display manager:
$ sudo dpkg-reconfigure kdm
Short of that you might try /usr/bin/startkde
