I don't know if this is even possible, but then again I don't use Gnome
myself. The only desktop I have seen that has extensive controls for
starting programs on specific workspaces/screens is Enlightenment. I
believe KDE can also do this, but I might be wrong on that.
However, you should be able to do this by writing a short script that
starts the applications and uses wmctrl to put them on the workspaces
where you want them, then launch that script from your .xsession file.
The description of wmctrl says that it is compatible with metacity, so
it should work. Try fiddling with wmctrl in a terminal first to get the
hang of how it works.
Good manuals for the Linux desktops seem to be in short supply. If
there isn't anything on gnome.org then I don't know what to suggest.
