How to get back Windows on the grub menu?

The UEFI boot menu looked like this before I updated it:
* Ubuntu
Advanced options for Ubuntu
Windows boot manager
Ubuntu 18.04.6 LTS
Advanced options for 18.04.6 LTS
UEFI Firmware Settings
In this case I *know* that the Ubuntu 18.04.6 LTS is actually my migrated Ubuntu
20.04.3 server and "Ubuntu" is the 20.04 LTS Desktop.
I did not want the text to show misleading stuff....
OTOH, when I set the PC boot priority to "Legacy first" then the menu looks like
this:
* Ubuntu
Advanced options for Ubuntu
Ubuntu 20.04.3 LTS (20.04) (on /dev nvme0n1p5)
Advanced options for Ubuntu 20.04.3 LTS (20.04) (on /dev nvme0n1p5)
Again the top Ubuntu is the desktop and I originally had to start that and then
use update-grub to get it to change into into this.
Before that it also showed
Ubuntu 18.04....
So here I only have 2 operating systems, both Ubuntu, and no Windows.
And this is what I wanted to remedy without realizing that the grub contents
depends on which mode the PC itself boots into...
So it was really impossible since Windows i UEFI-only!
Now I have set the PC back to UEFI first boot mode and all is well, I can boot
into all of the 3 operating systems.
I also managed to set the default to be the server version of Ubuntu.
What I *really* would like to do is to edit the text shown on the UEFI boot menu
to *clearly* state what it is like so:
Ubuntu 20.04.3 LTS Desktop
Advanced options for Ubuntu 20.04.3 LTS Deskto
Windows boot manager
* Ubuntu 20.04.3 LTS Server
Advanced options for Ubuntu 20.04.3 LTS Server
UEFI Firmware Settings
But googling gives me no hits on changing the boot menu texts.
