New 24.10 installation... ZFS or LVM ? (I will use encryption)

It does.  It offers "normal" "LVM" "LVM with encryption" "ZFS
(Experimental)" "ZFS with encryption (Experimental)"...

Regardless of whether you pick LVM or ZFS the instal procedes the same. The
reboot procedes the same (if encryption, it asks for the encryption
password).
