Testing via a VM is not a bad idea if you have the resources for that.

The last time I did a fresh install, which was many years ago, I think
I had to create the logical volumes manually and then assign them in
the installer. There's an option for doing your own thing with
partitions/logical volumes, as I recall.

I think more recently there is an option to use LVM, but I think it
just creates one logical volume and puts everything in it.

Like I say, I've not done this for quite some time, so your mileage may
vary!
