You can install Extensions to customise GNOME.
The catalogue is here:
https://extensions.gnome.org/
You'll need to install some browser and OS addons to do it. It will prompt you.
You can also install the GNOME Extensions Manager to see what you have
built-in and optionally disable them. It's in the Software store.
