Ubuntu STR 25.10 installs but won't boot (lenovo ThinkPad T420)

Hi,

I dusted down this lenovo T420 ThinkPad and it booted into Ubuntu 24.04
(.2, I think) and it worked fine. So I downloaded Ubuntu 25.10 and put it
on a Ventoy stick.

I booted the T420 with the Ventoy stick and I installed 25.10 on it -
wiping the entire drive. The install went OK and I dabbled with the system
OK.

So I rebooted.  I got a text mode screen, blue background and white text,
titled "Boot Menu", looking like this:-

Boot Menu
Ubuntu
ATAPI CD0- etc
ATA HDD:CT1000MX5000SSD1
PCI LAN etc

It looks like I can't even get to the GRUB screen.

Any ideas?
