Ubuntu STR 25.10 installs but won't boot (lenovo ThinkPad T420)

That sounds like the *BIOS* boot menu. For some reason you have the BIOS
configured to always display *its* bootable device menu (maybe done to allow
for booting off the USB Flash drive). You need to change that BIOS setting,
but first test things by selecting the ATA HDD option. *That* should pull up
the GRUB menu (or just go ahead and boot up Ubuntu, depending on the GRUB menu
timeout value.
