I asked Google AI what you might be able to do. It has several
suggestions:

It suggests these things to try:
	* Double-click the header above where the column ought to be
and it might just pop back into place.
	* Open the ~/.local/share/gnucash/books/foo.gcm file (replace
foo.gcm with your file's name) with a text editor and
search for the hidden column names and edit their width to
change it from zero to one hundred or some other number,
save it, and then restart GnuCash and adjust the column
	  width from there.
	* WARNING: I would back everything up before trying this one:
If all else fails, since column settings are unique to each
account and a new account will start with all columns
visible, create a new account, go to the old account,
select all transactions, and use Edit → Move Transactions.
