Unity is the new default desktop environment used from Ubuntu Natty (11.04)
onward - first seen in Ubuntu 10.10 Netbook Release
http://unity.ubuntu.com/

In 11.04 Unity is based on Gnome 2, in 11.10 it will be based on Gnome 3
(from http://www.wikivs.com/wiki/Gnome_Shell_vs_Unity)

Compiz is required for Unity in Natty - unless you install Unity 2D (based
on Qt)

What you're probably using now in 10.10 is Gnome 2.x, (called Gnome classic
in 11.04)

Gnome itself has also undergone a complete user interface redesign (Gnome
3), called "Gnome Shell", which looks and works very much like Unity.

Kubuntu, on the other hand uses the KDE desktop environment
Xubuntu uses XFCE
There are others too. For more info see
http://en.wikipedia.org/wiki/Comparison_of_X_Window_System_desktop_environments

ask google ;-) ) --

Unlike windows, the desktop environment is not integrated with the core OS,
which is why you don't have to re-install the whole system if you break your
graphical front end, and why the whole system won't crash when a gui
application misbehaves.
