Thank you for taking the time to report this bug and helping to make
Ubuntu better.

The installer `ubiquity` is in the process of being replaced; refer
https://discourse.ubuntu.com/t/refreshing-the-ubuntu-desktop-
installer/20659

Given this fact, adding new features to a deprecated, or soon to be
deprecated product makes little sense, so it maybe worthwhile instead to
suggest it as a feature for the replacement of `ubiquity`.

FYI: Lubuntu (since 18.10) & Ubuntu Studio (since 20.10) have used the
`calamares` installer and offer what you're asking for by default (it's
created issues though too, as an encrypted boot means chosen keyboard
settings (non-qwerty) may not be available until after you've entered
your encryption key.. so there are costs to it too for some users).

Title:
Include an option to encrypt /boot

Status in ubiquity package in Ubuntu:
  New

Bug description:
Currently, Ubiquity doesn't have an option to encrypt /boot, which
enhances security (some distros have this by default like KDE Neon and
Manjaro). Encrypting /boot can be done with the command line, though,
by creating the partitions scheme and setting up LVM. However, having
this option in Ubiquity would be handy.
