How to install Ubuntu Server 24.04.1 LTS with custom partitions?

Next problem: prtitioning during install

I have read a HowTo for installing Ubuntu off of a Live ISO where the
cutomization of partitions was described and it had things like separate
partitions for:
- EFI
- /
- /home
- /data

It was done in a live Ubuntu 20.04.1 trial when booting up the ISO.
All very well described and I pretty much assumed it was going to be like that
to install a customized Ubuntu Server 24.04.1 on my NUC 13 device....

Not so. :(

It seems to be impossible to make a server installation where you can have
separate partitions for in my case:

- EFI
- root
- home
- video
- SVNrepo
- something else

I have tried to figure this out using multiple trials, but failed.

Is it really impossible to do this install and leave space for the data I need
to be on separate partitions?

At the very least I want / and /home to be on separate partitions AND I want the
installer to NOT use up all of the drive space, because otherwise there is
nowhere to manually create the data partitions using GParted...

I don't remember it being this difficult 5 years ago....

Is the only way really to do this:

- Install Ubuntu Server which uses up all space.

- Run Gparted Live to shrink the too big single partition and create
  the data partitions.

- Run the Ubuntu Server and edit /etc/fstab to mount the extra partitions
  (Special handling needed to move /home over of course)

Note:
I am using a 1 TB SSD in this NUC and the server itself does not need all of
that space. It is needed for the *data* and that should reside in dedicated
partitions.

Any ideas?
